Pesto & Mozzarella Grilled Cheese

Grilled cheese may be a childhood favorite but you can upgrade it to this ooey and gooey pesto and mozzarella grilled cheese sandwich. Make sure you use some good quality ingredients to make the best sandwich. This is a gourmet cheese sandwich you can enjoy with a glass of wine. Yeah, it's that fancy.



The other wonderful thing about this grilled cheese is that it's quick to make. It's really just assemble and heat until nice and toasted. The trick is to make sure that you have a thin layer of pesto on both slices of bread. It creates a nice little barrier but also makes sure that you get flavor in every single bite.



April is grilled cheese month. I don' know how grilled cheese gets a whole month. Maybe it's because you can make so many different kinds of grilled cheese that you can't contain it to just one day.


I like pesto. But what is there not to like about pesto? It's basil, garlic, pine nuts, Parmesan cheese, and olive oil. All of the ingredients sound delicious so combining them together is a great idea. It sounds complicated but it's really not.



Layering these flavors with mozzarella cheese, fresh tomato, and more basil is serious eating. And at the end of it all it's the perfect balance of not too heavy of a meal and very satisfying.



Pesto & Mozzarella Grilled Cheese

Serves 1


Ingredient

2 slices of Sourdough bread

Unsalted butter to toast

2 Tbsp Pesto

1 oz Mozzarella cheese, sliced

1 - 2 slices of Beefsteak tomato

2 Basil leaves


Steps

1. Heat a low side skillet or griddle to medium high heat. While griddle is heating, butter one side of each slice of sourdough bread.

2. Layer 1 Tbsp of pesto to the un-buttered side of bread.

3. To one slice layer mozzarella, basil leaves, and tomato.

4. Top with the other slice of bread with the pesto side down. Place full sandwich on griddle and heat until toasted, about 4 minutes.

5. Flip on the other side and continue to toast until browned and cheese has melted. Enjoy!
