Salmon BLT Sliders with Red Pepper Mayo

For a spring party you may be looking for something light and quick to make that will satisfy your guests. These salmon BLTs are just what you need. Let me tell you that they were gobbled up as soon as I put them out so make sure you make enough so each guest can have a couple.



I love a good outdoor party. There's nothing better than feeling the wind caress your skin and the rays of sunshine dance on your face. Well, the only thing better is sharing the moment with friends.



I have a small backyard now which is great for the younger kids who come around and play. But it will be so exciting when I get a backyard big enough for the backyard bash that I keep envisioning in my head. Some people dream of elaborate vacations (I do that too) and I dream of parties to throw.


These salmon sliders are great for an outdoor party or an indoor tea party. They are pretty quick to make and only a few ingredients are needed. They are great freshly made or even at room temperature so they can be made ahead of time.



Salmon BLT Sliders with Roasted Red Pepper Mayo

Serves 4 - 6


Ingredients

6 - 8 oz salmon filet, skin removed

8 slider buns

3 Roasted Red Peppers, jarred

1/3 Cup Mayo

6 slices bacon, cooked

Baby spinach leaves

1 - 2 Roma tomatoes, sliced

Salt & Pepper, to taste


Steps

1. Preheat oven to 350 degrees. Spray a sheet pan with nonstick cooking spray or line with parchment paper. Season salmon with salt and pepper to taste. Bake salmon for 12 minutes until cooked throughout.

2. While the salmon is cooking, prepare the red pepper mayo. In a food processor, add the mayo and roasted red peppers and blend until you have a smooth consistency, 1 - 2 minutes.

3. Once the salmon is done, cut salmon into pieces small enough to fit on your sliders. Assemble your sliders. Top the bottom of the slider bun with your red pepper mayo. Then add on 3 spinach leaves. Top spinach with 1 strip of bacon broken into 2 to fit on the slider. Layer a slice of tomato on top of the bacon and top with the other half of the slider bun. Yum! You can enjoy immediately or at room temperature.
