Spicy Miso Cauliflower

Cauliflower is one of those vegetables that is often overlooked. Add some great flavors to cauliflower and you won't underestimate it ever again. This miso cauliflower is spicy and has lots of umami flavor. It's great on its own or as a side dish.

I paired this cauliflower dish with a Japanese yakitori style chicken drumstick and brown rice for my meal prep that week. It was just what the doctor ordered. It's important to plan different flavors and styles into your meal prep so that you don't get bored throughout the week or with meal prep.


Meal prep has been a lifesaver for me. The question of what's for dinner can be so overwhelming at times. LOL... You know all the memes out there with jokes about how women can't ever make up their minds on what they want for dinner. That's me sometimes. It mostly comes from too many options or just not craving anything at meal time. Well, meal prep takes that all away. I've already made some of the hardest decisions and everything is sitting here ready for me to enjoy. I've solved the what's for dinner question days ahead. Genius!

Meal prep is also money saving! On those days when I don't meal prep and don't cook, I'm eating out and spending a lot more on anything that I could have made myself. And I would have had leftovers. Sometimes I don't mind. Other times I'm so disappointed in the meal decisions I've made.


I used a very large pinch of cayenne pepper in my cauliflower recipe, you don't have to do the same. The recipe only calls for a quarter teaspoon of cayenne pepper. I used more because I love spicy foods. You can adjust the cayenne to your preference or leave it out all together. The dish will come out just as yummy.

Spicy Miso Cauliflower

Serves 4 as a side dish


Ingredients

1 Small Head of Cauliflower, cut into florets

2 Tbsp White Miso

2 Tbsp Seasoned Rice Vinegar

1 Tbsp Light Brown Sugar

2 Tbsp Canola Oil

1 Tbsp Soy Sauce

1 tsp Mirin

1/4 tsp Cayenne Pepper

Juice of Half a Lime


Steps

  1. Preheat oven to 400 degrees. Line a baking pan with parchment paper.

  2. Combine all ingredients except cauliflower in a large bowl. Mix well. Add in cauliflower florets and mix until all the florets are well coated.

  3. Spread over prepared baking pan with at least an inch between florets. Bake for 30 minutes or until florets are tender. Serve warm.
