Turkey Sausage, Swiss, and Spinach Breakfast Sandwich

This turkey sausage, swiss, and spinach breakfast sandwich is hearty enough to fuel you through your busy morning until lunch. I like a hearty sandwich in the morning. I like it even better when there's not much work for me to do to prepare it. When I meal prep ahead by sautéing the spinach and cooking the sausage ahead of time, I can have this sandwich in hand in less than 3 minutes. That's happiness.



I visited the Pennsylvania Dutch market to see what kinds of goodies I could find while there. They sell everything from prepared food and spices to raw poultry and furniture. I found some yummy raw ground turkey sausage spiced with sage. It was behind the deli case to buy by the pound. I only bought a half pound that time. I can't wait to get more. It was not only delicious, it filled the house with intoxicating smells of sage and spices. It is a perfect blend for this breakfast sandwich.



When assembling this breakfast sausage I like to melt the cheese on the sausage slightly by popping both in the microwave for a couple of seconds. Meal prep for this sandwich is simple. Cook the sausage through ahead of time. Sauté the spinach with olive oil and garlic ahead of time. When you're ready to eat, toast your favorite bagel. Reheat turkey sausage and spinach and melt cheese over sausage. Assemble your breakfast sandwich and enjoy.



Turkey Sausage, Swiss, and Spinach Breakfast Sandwich

Serves 4


Ingredients

1/2 lb Turkey breakfast sausage

4 Cups Baby spinach

1 Tbsp Olive Oil

1 Clove Garlic, minced

4 slices of low-fat Swiss cheese

4 Bagels, toasted


Steps

  1. Form 4 patties out of the turkey sausage. Cook over medium heat until cooked thoroughly cooked through flipping halfway through. Once cooked, add a slice of cheese on each patty to melt. Once slightly melted, remove from heat. Set aside.

  2. In a separate pan, heat 1 Tbsp Olive oil. Add in minced garlic and sauté about 30 seconds. Add in spinach and cook about 5 minutes over low heat until wilted. Stir frequently. Once cooked set aside.

  3. Assemble sandwiches by topping bottom toasted bagel with 2 - 3 Tbsp of cooked spinach, cooked turkey sausage and melted cheese. Top with other half of the bagel and enjoy!

  4. To make-ahead, cook sausage and spinach. Reheat sausage, cheese, and spinach while toasting bagel. Assemble and enjoy.
